Second entry of the day

There were no meetings to attend today so I went home at 3pm and got home around 4, after making a stop at the supermarket for groceries. I decided to indulge in one of my domestic pleasures tonight, cooking. I am just done.

I would like to share with all of you this idiot-proof recipe for prawn (or jumbo shrimp, or whatever you call it where you are). You need a blender or food processor for this.

Prawn in Spicy Tomato Sauce

Serves 2
4 beef tomatoes (or just large ripe tomatoes)
2 green onions
4-6 bird's eye chillies (chilli padi) or 4 large red chillies
Turmeric
Salt
Sugar
Oil
20 tiger prawns, medium-sized, shelled and deveined (keep the heads on for more flavour, but trim off the feelers or whatever they're called 'cos they're a pain in the neck)

Instructions

  1. Sprinkle turmeric and salt on prawns. This is to give the prawns a nice golden colour and to get rid of the "fishy" smell.
  2. Fry the prawns until they turn pink. Remove and set aside.
  3. Dice tomatoes and onions
  4. Slice the chillies.
  5. Combine tomatoes, onions and chillies in a food processor/blender. Blend until everything is coarsely mixed. You do not want a paste.
  6. Heat oil in saucepan or wok. Add the blended ingredients and stir the mixture for 10 minutes.
  7. Turn the heat down and continue to stir the mixture until half the liquid has evaporated and the mixture turns orangey-red.
  8. Add salt (1 teaspoon, or according to taste).
  9. Add 1 level tablespoon of sugar.
  10. Continue to stir mixture until it has dried into a paste-like texture.
  11. Stir in the prawns. Make sure the paste coats the prawns evenly.
  12. Turn off heat after 5 minutes.
  13. You're done! Serve dish with rice and vegetables, e.g. Chinese-style stir-fried kai lan.

This dish has an Asian flavour because of the chilli. I have no idea how nice it will taste if you omit the chilli. Anyhow, whenever I make this dish, it's always a hit, so I hope it has the same effect on you, or your family and/or guests. Good luck!
